Held every Tuesday at OhDelices Culinary Academy, this four-week series is led by our talented Dadas, guardians of Morocco’s rich culinary heritage. Perfect for beginners and food enthusiasts alike, this hands-on program will teach you the essential techniques and recipes that make Moroccan cuisine so unique and beloved!

Each week, you'll explore a new theme, from savory specialties to delightful sweets, learning to prepare authentic Moroccan dishes that will become staples in your own kitchen. With step-by-step guidance from our Dadas, you’ll gain confidence while discovering the flavors, textures, and traditions that bring Moroccan families together.

Class Lineup

Week 1 : Moroccan salads

7 October | 18h00 - 20h00 

Join this hands-on class and learn to prepare two essential Moroccan starters: Cauliflower Zaalouk, a smoky, spiced cauliflower dip; and Caramelized Pumpkin, a sweet-savory side dish infused with warm Moroccan spices.

Week 2  : Moroccan Harsha and msemen with khlii

14 October | 18h00 - 20h00 

This interactive class will boost your confidence in the kitchen as you master two essential Moroccan breads. Guided by our expert in Moroccan cuisine, you'll prepare Harsha, a golden semolina pan-fried bread, elevated with black olives and cheese for a savory twist; and Msemen, the iconic square-shaped layered flatbread, enriched with khlii—Moroccan preserved meat—for a flavorful, traditional filling. Both are beloved in Moroccan homes and pair perfectly with tea or a light salad.

Week 3 : Tagine mderbal

21 October | 18h00 - 20h00 

Master the art of Tagine Mderbel, a rich and comforting Moroccan stew featuring tender beef, silky eggplants, and hearty chickpeas. In this class, you’ll learn to layer deep flavors using a slow-cooked spiced tomato and onion base, infused with garlic, cumin, and a touch of preserved lemon. This tagine is a celebration of texture and taste, traditionally served with Moroccan bread and perfect for sharing at family or festive gatherings.

Week 4 : Seffa Couscous

28 October | 18h00 - 20h00  

Dive into Morocco’s culinary heritage by mastering the art of Seffa, a beloved sweet couscous dish made with dried fruits. In this class, you'll learn to prepare light, fluffy steamed couscous delicately flavored with cinnamon and butter, then topped with a generous mix of dried fruits, almonds, and powdered sugar. This festive dish, often served at special occasions, beautifully balances sweet and savory for a uniquely Moroccan experience.
